PEPE NERO facoltativo &#8211; q. b.<o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"line-height: 115%;\"><o:p>&nbsp;<\/o:p><\/span><\/p>\n<p class=\"MsoNormal\" style=\"\"><span style=\"line-height: 115%;\">PREPARAZIONE:<o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\" style=\"\"><span style=\"line-height: 115%;\">Iniziate con la preparazione della pasta fresca: unite le<br \/>\nuova sbattute alla farina, lavorate il composto in modo tale da incorporare<br \/>\nbene gli ingredienti.<o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\" style=\"\"><span style=\"line-height: 115%;\">Stendete il composto di farina e uova sul piano di lavoro,<br \/>\nimpastate bene con le mani, formate una palla, avvolgetela con della pellicola<br \/>\ntrasparente e mettetela a riposare in frigorifero per almeno mezz&#8217;ora.<o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\" style=\"\"><span style=\"line-height: 115%;\">Preparate a questo punto la besciamella: in una pentola fate<br \/>\nsciogliere il burro dopodich\u00e9 aggiungete tutta la farina in una sola volta; con<br \/>\nl&#8217;aiuto di una frusta fate assorbire completamente la farina al burro fuso e<br \/>\nlasciate tostare leggermente.<o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\" style=\"\"><span style=\"line-height: 115%;\">Versate il latte nella pentola, continuate a mescolare con la<br \/>\nfrusta in modo tale da evitare la formazione di grumi, salate, pepate e<br \/>\ninsaporite con un pizzico di noce moscata. Continuate a mescolare con la frusta<br \/>\nfino a quando il latte avr\u00e0 preso bollore e il composto comincer\u00e0 ad addensarsi<br \/>\nin modo da formare la besciamella. Una volta pronta fate raffreddare.<o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\" style=\"\"><span style=\"line-height: 115%;\">Preparate a questo punto il condimento dei cannelloni ricotta<br \/>\ne spinaci: mettete a soffriggere un trito di cipolla in una casseruola con<br \/>\ndell&#8217;olio, versate insieme la passata di pomodoro, regolate con il sale e se<br \/>\ngradite anche un pizzico di pepe, lasciate cuocere e ristringere leggermente.<o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\" style=\"\"><span style=\"line-height: 115%;\">A questo punto dedicatevi alla farcia dei cannelloni:<br \/>\nsminuzzate con un coltello gli spinaci precedentemente sbollentati e strizzati;<br \/>\ntrasferiteli in una ciotola con la ricotta setacciata, insaporite il composto<br \/>\ncon una spolverata di parmigiano grattugiato e un pizzico di sale. Aggiungete<br \/>\npoi un pizzico di noce moscata e mescolate il tutto.<o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\" style=\"\"><span style=\"line-height: 115%;\">Porzionate la pasta fresca, infarinatela e stendetela con la<br \/>\nmacchinetta stendi-pasta.&nbsp;&nbsp; <o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\" style=\"\"><span style=\"line-height: 115%;\">Stendete le strisce di pasta e ricavate dei quadrati.<o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\" style=\"\"><span style=\"line-height: 115%;\">Immergete per qualche istante i quadrati di pasta fresca in<br \/>\nacqua bollente, scolate i quadrati e lasciateli asciugare su di un canovaccio<br \/>\ndi cotone.<o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\" style=\"\"><span style=\"line-height: 115%;\">Farcite ogni quadrato di pasta e arrotolate in modo da<br \/>\nformare i cannelloni.<o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\" style=\"\"><span style=\"line-height: 115%;\">Cospargete il fondo di una pirofila con la besciamella e<br \/>\nposizionatevi sopra i cannelloni appena preparati.<o:p><\/o:p><\/span><\/p>\n<\/p>\n<p class=\"MsoNormal\" style=\"\"><span style=\"line-height: 115%;\">Condite i cannelloni di ricotta e spinaci con la salsa di<br \/>\npomodoro, la besciamella e il parmigiano grattugiato.
