spuntatele e tagliatele a rondelle<br \/>\ntrasversali e non eccessivamente sottili. Lavate e asciugate menta e<br \/>\nprezzemolo, quindi tritateli al coltello oppure in un mixer. Scaldate<br \/>\nabbondante olio per friggere in una padella.<o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"line-height: 107%;\">Quando<br \/>\nl\u2019olio \u00e8 ben caldo, iniziate a friggere le zucchine (poche per volta in modo<br \/>\nche non si attacchino e che la temperatura dell\u2019olio non si abbassi<br \/>\neccessivamente). Cuocetele per 2-3 minuti, girandole spesso, finch\u00e9 non saranno<br \/>\ndorate. Scolatele quindi con un mestolo forato e fatele asciugare su un foglio<br \/>\ndi carta assorbente.<o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"line-height: 107%;\">Salatele<br \/>\nleggermente e disponetele una accanto all\u2019altra in recipiente dai bordi alti,<br \/>\ncondendole con un po\u2019 di trito di menta e prezzemolo e con qualche pezzetto di<br \/>\naglio.<o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"line-height: 107%;\">Alla fine<br \/>\nirrorate il tutto con 3-4 cucchiai di aceto. <o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"line-height: 107%;\">Quando la<br \/>\nconcia di zucchine sar\u00e0 fredda, coprite il recipiente con un foglio di<br \/>\npellicola e lasciate riposare in frigorifero almeno per 4 ore, meglio ancora<br \/>\nun\u2019intera giornata. <o:p><\/o:p><\/span><\/p>\n<\/p>\n<p class=\"MsoNormal\"><span style=\"line-height: 107%;\">Tirate fuori<br \/>\ndal frigorifero la concia di zucchine 30 minuti prima di servirla.<span style=\"font-size: 16pt;\"><a name=\"_GoBack\"><\/a><o:p><\/o:p><\/span><\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>La concia di zucchine, piatto tipico della cucina giudaico-romanesca, \u00e8 un ottimo contorno, ma pu\u00f2 diventare anche piatto unico se accompagnata da pane casereccio fresco, meglio se appena sfornato.
